Slow Cooked Dried Beans

I eat beans almost every day either for lunch, dinner, or both. This recipe works for dried white beans, pinto beans, great northerns and others.

Equipment

  • 1 Crock Pot Slow Cooker

Ingredients
  

  • 1-2 Lbs Dried Beans (Pinto, White etc.)
  • 1 Large Onion Chopped
  • 1 Small Hock This is optional if you don't eat pork, can be replaced with salted chick broth
  • 1 Tsp Salt to taste
  • 1 Tsp Pepper to taste
  • 1 Can Diced Tomatoes Optional but reduces the acid

Instructions
 

  • Place beans in crockpot with water, let sit 12 hours – do this the night before
  • Drain water
  • Add all ingredients except for the diced tomatoes
  • Add water or chicken broth to cover beans ½ inch
  • Slow cook all day until soft, this makes the house smell wonderful all day!
