Slow Cooked Dried Beans
I eat beans almost every day either for lunch, dinner, or both. This recipe works for dried white beans, pinto beans, great northerns and others.
Equipment
- 1 Crock Pot Slow Cooker
Ingredients
- 1-2 Lbs Dried Beans (Pinto, White etc.)
- 1 Large Onion Chopped
- 1 Small Hock This is optional if you don't eat pork, can be replaced with salted chick broth
- 1 Tsp Salt to taste
- 1 Tsp Pepper to taste
- 1 Can Diced Tomatoes Optional but reduces the acid
Instructions
- Place beans in crockpot with water, let sit 12 hours – do this the night before
- Drain water
- Add all ingredients except for the diced tomatoes
- Add water or chicken broth to cover beans ½ inch
- Slow cook all day until soft, this makes the house smell wonderful all day!
