Breakfast Burrito
Optional ingredients to create meat lovers or veggie only. I prefer the Poblano peppers.
Ingredients
- 1 Bag White potatoes Thin skin so you don't need to peel them
- 1 Large Onion Chopped
- 4 Cloves Garlic Cleaned and chopped
- 6-8 Large Eggs
- 1 Bag Grated cheese
- 1 Package Large Flour Tortillas
- 1 Aliquot Bacon, Sausage, Mushrooms, Poblano Peppers Optional ingredients for additional flavoring
Instructions
- Slice potatoes, onion, garlic
- Cook potatoes in a large skillet with olive oil on medium heat, this takes the longest and must be stirred. The potatoes will want to stick to the pan…
- In a separate smaller skillet, cook onion. When soft add garlic and peppers.
- If using bacon, sausage, or mushrooms, pre-cook these as well
- When potatoes are almost done, add eggs, cheese, onion, garlic, peppers and any other optional ingredients.
- Let the mixture cool 10 minutes, then spoon into the tortillas and wrap.
