Breakfast Burrito

Optional ingredients to create meat lovers or veggie only. I prefer the Poblano peppers.

Ingredients
  

  • 1 Bag White potatoes Thin skin so you don't need to peel them
  • 1 Large Onion Chopped
  • 4 Cloves Garlic Cleaned and chopped
  • 6-8 Large Eggs
  • 1 Bag Grated cheese
  • 1 Package Large Flour Tortillas
  • 1 Aliquot Bacon, Sausage, Mushrooms, Poblano Peppers Optional ingredients for additional flavoring

Instructions
 

  • Slice potatoes, onion, garlic
  • Cook potatoes in a large skillet with olive oil on medium heat, this takes the longest and must be stirred. The potatoes will want to stick to the pan...
  • In a separate smaller skillet, cook onion. When soft add garlic and peppers.
  • If using bacon, sausage, or mushrooms, pre-cook these as well
  • When potatoes are almost done, add eggs, cheese, onion, garlic, peppers and any other optional ingredients.
  • Let the mixture cool 10 minutes, then spoon into the tortillas and wrap.
