Chicken Taco Soup

Equipment
- 1 Slow Cooker Crockpot
Ingredients
- 1 Large Onion
- 1 16 oz can chili beans
- 1 15 oz can black beans
- 1 15 oz can whole corn drained
- 1 8 oz can tomato sauce
- 1 12 oz can beer
- 2 10 oz can diced tomatoes better with the green chilis
- 1 package taco seasoning
- 3 whole chicken breasts skinless
- 1 package shredded cheese optional topping
- 1 cup sour cream optional topping
- 1 bag tortilla chips optional topping
Instructions
- Place the onion, chili beans, black beans, corn, tomato sauce, beer and diced tomatoes in slow cooker.
- Add taco seasoning and stir to blend
- Lay chick breasts on top of the mixture, pressing down slightly until just covered.
- Cover and cook on "low" for 5 hours
- Remove chicken breast, shred and place back into the pot
- Cook for 2 more hours
- Service topped with cheese, sour cream, and tortilla chips
