Chicken Taco Soup

Equipment

  • 1 Slow Cooker Crockpot

Ingredients
  

  • 1 Large Onion
  • 1 16 oz can chili beans
  • 1 15 oz can black beans
  • 1 15 oz can whole corn drained
  • 1 8 oz can tomato sauce
  • 1 12 oz can beer
  • 2 10 oz can diced tomatoes better with the green chilis
  • 1 package taco seasoning
  • 3 whole chicken breasts skinless
  • 1 package shredded cheese optional topping
  • 1 cup sour cream optional topping
  • 1 bag tortilla chips optional topping

Instructions
 

  • Place the onion, chili beans, black beans, corn, tomato sauce, beer and diced tomatoes in slow cooker.
  • Add taco seasoning and stir to blend
  • Lay chick breasts on top of the mixture, pressing down slightly until just covered.
  • Cover and cook on "low" for 5 hours
  • Remove chicken breast, shred and place back into the pot
  • Cook for 2 more hours
  • Service topped with cheese, sour cream, and tortilla chips
