Hamachi Kama
Ingredients
- 2 Pieces Hamachi Kama (collar of yellowtail)
- 1 Tsp Kosher Salt
For Serving
- 1 Tbsp Soy Sauce
- 1 Tsp Yuzu Sauce
- 1 small Lemon split
Instructions
- If fish is frozen, thaw
- Pre-heat broiler with rack 6 inches away
- Crinkle sheet of aluminum foil (to keep fish from sticking)
- Place fish on the foil, skin side down and sprinkle with salt
- Broil 8-10 minutes until surface is blistered and slightly brown
- Serve with a mix of Soy and Yuzu sauce and a side of lemon
