Hamachi Kama

Ingredients
  

  • 2 Pieces Hamachi Kama (collar of yellowtail)
  • 1 Tsp Kosher Salt

For Serving

  • 1 Tbsp Soy Sauce
  • 1 Tsp Yuzu Sauce
  • 1 small Lemon split

Instructions
 

  • If fish is frozen, thaw
  • Pre-heat broiler with rack 6 inches away
  • Crinkle sheet of aluminum foil (to keep fish from sticking)
  • Place fish on the foil, skin side down and sprinkle with salt
  • Broil 8-10 minutes until surface is blistered and slightly brown
  • Serve with a mix of Soy and Yuzu sauce and a side of lemon
