Kale and Bean Soup

Great way to use some extra Kale

Ingredients
  

  • 4 Cup Chicken Broth
  • 2 Cup Water
  • 6 Cloves Garlic Minced
  • 1/2 Large Onion Chopped
  • 2 Lb Kale Chopped
  • 1 Can Canellini Beans
  • 4 Tbsp Parmesan Cheese Grated

Instructions
 

  • Heat oil in a large soup pot, saute onion and garlic
  • Add Kale and stir about 3 minutes till wilted
  • Add broth & water
  • Cover pot and simmer for about 30M
  • Add beans and cook until heated through
  • Serve with cheese sprinkled on top
