Kale and Bean Soup
Great way to use some extra Kale
Ingredients
- 4 Cup Chicken Broth
- 2 Cup Water
- 6 Cloves Garlic Minced
- 1/2 Large Onion Chopped
- 2 Lb Kale Chopped
- 1 Can Canellini Beans
- 4 Tbsp Parmesan Cheese Grated
Instructions
- Heat oil in a large soup pot, saute onion and garlic
- Add Kale and stir about 3 minutes till wilted
- Add broth & water
- Cover pot and simmer for about 30M
- Add beans and cook until heated through
- Serve with cheese sprinkled on top
