Kale and Bean Soup

Great way to use some extra Kale

- 4 Cup Chicken Broth
- 2 Cup Water
- 6 Cloves Garlic Minced
- 1/2 Large Onion Chopped
- 2 Lb Kale Chopped
- 1 Can Canellini Beans
- 4 Tbsp Parmesan Cheese Grated
Heat oil in a large soup pot, saute onion and garlic
Add Kale and stir about 3 minutes till wilted
Add broth & water
Cover pot and simmer for about 30M
Add beans and cook until heated through
Serve with cheese sprinkled on top
