Equipment

  • 1 large cooking pot

Ingredients
  

  • 1 Lb Fish You pick, snapper, tilapia cod, etc.
  • 1 Tsp Liquid Smoke
  • ΒΌ Cup Olive Oil Or other
  • 1 Medium Onion Chopped
  • 1 Large Green Pepper Chopped
  • 2 Cloves Garlic
  • 1 Tbsp Dried Parsley
  • 1 Lb Can of Tomatoes
  • 8 Oz Can of Tomato Sauce
  • 3 Cups Water
  • 1 Bag New Potatoes Quartered

Instructions
 

  • Place cubed fish in a bowl with liquid smoke to rest for 30 Minutes
  • In the pot, brown Onion and Green Pepper in oil, add garlic at the end
  • Place all other ingredients into the pot, bring to a boil and simmer another 20 minutes
  • Test Potatoes. When they are almost done, add the fish and cook another 3-5 minutes.
  • Serve with tabasco, add salt & pepper to taste
