Instant Pot Lamb Shanks

Equipment

  • 1 Instant Pot

Ingredients
  

  • 2 Medium Lamb Shanks *they need to fit in the pot!
  • 2 Tbsp Olive Oil
  • 8 Cloves Garlic
  • 2 Medium Tomatoes or a handful of cherry tomatos
  • 1 Large Onion Sliced
  • 1 Cup Chicken Stock
  • 2 Tsp Ground Cumin
  • ½ Tsp Cinnamon
  • ½ Tsp Tumeric
  • ½ Tsp Coriander
  • Salt and Pepper to taste

Instructions
 

  • Brown lamb shanks on high heat to lock in flavor with olive oil, salt and pepper
  • Saute onions, add the garlic near the end with all spices
  • Add chicken stock to instant pot, add lamb and onion mix
  • Cook 36 minutes high, 15 minutes natural release

Notes

Great with spaetzle or potatoes.  Use the remaining juices for gravy topping.
