This costs a small fortune to buy at the store. You can make it yourself for a fraction and it can even be frozen to use later.

Salmon fillet
cut into 6 inch chunks

Brown Sugar

Salt
I prefer kosher

Crab Boil or Old Bay Seasoning
Instructions
Optional: catch your own Salmon
Remove skin from filet if still attached
Place sugar, salt, seasoning in a dish that you can cover with warm water and mix thoroughly to dissolve sugar and salt.
Add fish, be sure it is covered with the mixture. You can add more water if needed.
Cover dish and let sit overnight in the fridge.
Next day, smoke with your favorite wood on low heat 90-120 minutes until done.
