Smoked Salmon

This costs a small fortune to buy at the store. You can make it yourself for a fraction and it can even be frozen to use later.

  • 1 Smoker

Ingredients
  

  • 1 Large Salmon fillet cut into 6 inch chunks
  • 2 Cups Brown Sugar
  • ½ Cup Salt I prefer kosher
  • ½ Cup Crab Boil or Old Bay Seasoning

Instructions
 

  • Optional: catch your own Salmon
  • Remove skin from filet if still attached
  • Place sugar, salt, seasoning in a dish that you can cover with warm water and mix thoroughly to dissolve sugar and salt.
  • Add fish, be sure it is covered with the mixture. You can add more water if needed.
  • Cover dish and let sit overnight in the fridge.
  • Next day, smoke with your favorite wood on low heat 90-120 minutes until done.
