Spam Musubi

I am told by the folks who have tried this that it is very authentic and delicious. I've only tasted the actual Hawaiian version one time but this seems close to what I remember.

Equipment

  • 1 Instant Pot or you can just cook the rice on the stove
  • 1 Skillet

Ingredients
  

  • Cups Nishiki Rice see Instant Pot Nishiki Rice recipe
  • 2 Tbsp Sugar
  • ¼ Cup Rice Wine Vinegar
  • 1 Can SPAM Cut into ⅕ inch slices
  • ½ Cup Soy Sauce
  • 3 Sheets Nori dried seaweed
  • ¼ Cup White wine
  • Cup Furikake

Instructions
 

Prepare Rice

  • Cook the Rice per my "Instant Pot Nishiki Rice" recipe
  • Mix rice wine vinegar and 1 tbsp of sugar
  • Poor over rice and mix
  • Note: it works much better if you let the rice cool down before assembling the Musubi

Cook the Spam

  • Cook SPAM, no oil, 4 minutes per side until brown
  • Remove from skillet
  • Add 1 tbsp sugar, soy sauce, and white wine. Mix and bring to a boil
  • Reduce heat and let simmer for 5 minutes
  • Add SPAM back in and let simmer another 5 minutes

Assemble the Musubi

  • Cut sheet of Nori into thirds for wrapping
  • Place a piece of plastic wrap into the SPAM container and fill it about ½ full of the rice.
  • Mash the rice down into the container until it is a nice solid block and remove
  • Sprinkle the rice block with Furikake, this is optional but it adds a lot
  • Set a piece of the cooked SPAM on top
  • Wrap with a piece of Nori, shiny side facing outward. I like to "glue" it with a bit of water to stick the ends.
